The first week of my 30 Day Vegan Journey


Spring is right around the corner... These pictures were taken last March... We are so excited about the thought of the deep snow slowly melting to reveal the green energy waiting to emerge.

My experiences from my first week on my vegan journey?
My energy and vitality were strong all week. I hit a wall on Saturday; tired, grumpy and feeling down. I realized how important it is to have something ready in the fridge. My digestion was irritating. My body shape was totally bloated and well, um, gassy... yikes, did I just type that? Surprisingly, the only thing I craved was cheese... who knew? I have never had a relationship with cheese before. We have a big block of locally made Goda cheese just tempting me... Oh, but that was my biggest challenge and I just crowded it out with avocados, my most nourishing food of the week... The most fun that I had was shopping for new (to me) ingredients with my son... My posture and breathing have been wonderful, practicing my yoga and Vipassana every day... a gift to the new day.

My greatest accomplishment was giving up tea with tons of sugar. No tea, no sugar. I didn't think I would dig that part, but I do, I have. Other thoughts include the fact that I didn't crave cookies or cake as much as I thought I would. I still gift myself small squares of wonderful chocolate, fruit and my homemade granola. Very satisfying. And my plan for next week is to walk 6 days a week and 3 of those days I want to walk for at least 45 minutes. I just bought new walking sneakers.... yay!
