I am happily taking the 30 Day Vegan journey with a group of other people from all around the country. Our guru Heather who pens one of my favorite blogs, Beauty That Moves is our wonderful guide and inspiration...
She shares delicious recipes and insights into living a more balanced life. I love the quotes, photos, and most of all, her encouragement to try new things in new ways. I love knowing there is a guiding hand leading the way and keeping it all together.
I just click on our nourishing blog and go.
One of the things I liked best about Heather's approach was to give us a running start. We started getting ideas a week before we actually started our new way of eating. One of her recommendations was to clean up and organize our cupboards. I loved the push.
We built this cupboard out of our old kitchen floor boards and an old door we found at an antique shop. It was originally designed to give us a way to hide our ugly plumbing but has turned into a wonderful "pantry". Sunday night before our first day my son and I made three big batches of granola. He made his, I made mine and we both made one for dad.
My son and I used vanilla, maple syrup and a little honey as our base with lots of cinnamon. We added almonds, walnuts, pecans, pumpkin and sunflower seeds, dried cherries, cranberries, raisins, papaya, pineapple, mango, and blueberries (coconut for me - dehydrated raspberries for him).
For dad we made it simple, vanilla and powdered ginger, almonds, dried blueberries, raisins and a tiny bit of diced candied ginger. When he got home from his trip he was so excited to have his own granola.
It has become my little snack instead of cookies or cake... crowding out the other stuff with a bowl of crunchy sunshine!
He is my other "pantry" in the laundry room. I love to keep my other grains, rice and stuff out here. Just feels old fashioned...
Part of our homeschool journey this week was the beginning of Botany!!! I sat up one evening to make this cross section of a flower out of thin sheets of bees wax, a daffodil to be exact. The following morning I drew the flower diagram on our chalkboard and we started talking about the journey of a flower and a bee. He drew a picture and we discussed the parts of the flower. I said, "Hmmmm? Wish we had a flower," and then I handed him this wax model. He was so happy, he yelled. Who knew he would get such a kick out of a flower? He told everyone that called that day about it and emphasized the fact that I "made" it for him. That was the greatest gift of all. It was a wonderful moment for me to see him so happy and so proud of me, WOW, the sweet little gifts of homeschooling.
Namaste
